exercise ideas for rough playing dog

I'm looking for suggestions for some games or exercise ideas that I can do with my dog Toro to keep him active. We get out of the city on weekends and go for long hikes but while at home during the week while my husband is at work what else can I do with him. Also we live in the city and have no backyard at our house but can walk over to a park but there are usually lots of people out during the day.

My female is older and does not really like to play with him at all. She is ball obsessed and Toro doesn't fetch or run for sticks or balls. He won't go running with me beside the bike or rollerblades because he is very scared of wheels.

The only game he seems to like is chasing me. This seems to get him running around and playing, but when he catches me, he likes to play very rough and jumps up on me. I don't want to encourage that because he is 130 pounds (outweighs me by at least 20 pounds and is bigger than me). He also likes to 'play bite' my hands or my sleeves. Sometimes while playing he'll do a growl too as he tries to play bite my hands. He never bites but his teeth are big enough that it can hurt just from touching. How do I get him to stop this behaviour? Usually when he gets rough I just stop and say " No" and he stops but then he's bored again and just walks around sniffing. He's almost 3 years old.

He also likes playing with other dogs but because he is so big he plays rough and bodychecks dogs unless they are big. There used to be a Newfoundland dog and a Great Pyranees in our neighbourhood that played well with him but they moved.
