That says it perfectly, I'm so sorry for your loss, it's obvious from your post what a special relationship you had and I know how your mom feels, my mother would get that way with all of our dogs as well.
I lost a girl I'd only had for 6 months to a blood disease, I didn't think I'd get over her as she was my heart dog - But when I looked in her eyes and saw how tired she was and it was obvious she was telling me it was time, I cried like a baby for days, I still do when I think of her and it's been about 4 years.
Once you have been loved by a Rottie, it's hard to not have one in your life.
Take it one day at a time and you and your mom can share the happy and funny moments..... then when you are ready Sabu will be watching you pick another Rottie to love.
