Since I've been the most vocal in this thread, let me be the first to say welcome. As you say you've read all the posts about Kimbertal on this forum, you must have run across the ones posted by people who had first-hand experience with the place, were very, very unhappy and ended up with sick or crippled dogs. Most of us are motivated to speak out to try and ensure that others don't have to go through the same thing.
We all hope that people will do their research, find out what health checks they should be asking for, find out what the breed standard is, find out what they should be looking for temperament wise, unfortunately, not everyone does. If they are lucky enough to find a responsible breeder, they will learn these things. The lady with the 175 lb dog probably didn't know any better, probably thought they were supposed to be giant dogs...and you're right, if a dog is predisposed to HD, this kind of weight would aggravate it immensely.
People can be ignorant of the facts and we can't do a whole bunch to change that, but to my mind, a responsible breeder will soon set them straight, not just go ahead and sell them an out-of-standard dog, charge an exorbitant price and send them merrily on their way, thinking they have a correct dog.
